Hello! I'm Brianna, and I'm going to be teaching you to make Orkney Mist!
Its a dish that originates in Orkney - which is an island off of the north of Scotland, and where our very own peedie princess lives.

Ingredients;
4 pear Halves (tinned) 4 tablespoons ginger conserve or jam 55g (2oz) caster suger 1 tablespoon lemon juice 3 table spoons ginger wine 2 tablespoons whisky (obviously, better to include it, but if needbe, i think it could live without - it does add flavour tho) 1/2 pint double cream

Place pear half, cut side up, in base of 4 small glass dishes and put a teaspoon of ginger conserve/jam in each hollow.
Mix together sugar,lemon juice,ginger wine & whisky and stir to dissolve sugar. Whisk cream lightly and when just thickened,add whisky mixture,and whisk until the cream holds the trail of whisking.

Spoon over the top of the pears & chill for at least 2 hours.

Mmm... yummy!
This recipe has been in my family for years, and I love it! The whisky doesn't do anything remember. Theres barely any in there!
