It's going to be a great day here at the Newson household. Gavin needs to get started on the preparation for tonight's dinner, Cheesy Spinach Shrimp Lasagna! He hopes he will see his sisters tonight for dinner.

It's off to the garden to harvest the spinach, but first Gavin needs to print out the recipe.

Gavin finds the recipe on www.recipesource.com. He remembers his step-mom Trish Traveller first showing him this recipe, but on this website they use Broccoli instead of Spinach. Thats ok, either one is fine, but Gavin loves Spinach.

First we get all the ingredients:
9 lasagna noodles 3 tablespoons of butter or margarine 1/4 cup of all purpose flour 1/4 cup of green onions - sliced 1/2 teaspoon of salt 1/2 teaspoon dry mustard powder 1/4 teaspoon dried thyme 1/4 teaspoon cayenne pepper 2 1/2 cups milk 8 oz. block of monterey jack cheese - shredded 16 oz. spinach fresh or frozen 2 1/2 cups of shredded sharp cheddar cheese 1 pound shrimp - cooked and deveined

Gavin and wife, Roxie, are very proud of their new renovated kitchen. However, Roxie is not much help in the kitchen. She is still very good company, while Gavin does all the work. Gavin thinks fondly about the memory of when they first met at Sim State University.

Gavin starts out by cooking the lasagna noodles according to the package directions, or just until al dente. He rinses the noodles with warm water and puts them aside.

Gavin melts the butter in a medium saucepan over medium heat. Then he stirs in the flour, onions, salt, dry mustard, thyme and red pepper.

Gradually, he adds milk, stirring constantly. Gavin cooks and stirs until the mixture is bubbly and thickened. He removes the sauce from the heat and adds monterey jack cheese and stirs until melted.
Roxie is glad to have the butler cleaning up after Gavin's mess.

Gavin takes a short break to change into everyday clothes now that it's getting later in the day. Ok, back to cooking the Cheesy Spinach Shrimp Lasagna. He heats the oven to 350 degrees, Farenheit.

Gavin reads the recipe and carries on. It says, "In ungreased 13 x 9 baking dish, layer 1/2 cup of cheese sauce, 3 lasagna noodles, all of the spinach, and 1/3 of the shredded cheddar, and 1 cup of the cheese sauce.
"Top with 3 more noodles, all of the shrimp, 1/3 of the shredded cheddar and another cup of the cheese sauce.
"Finish by layering the last of the noodles, shredded cheddar and cheese sauce."

He bakes the lasagna for 30 minutes until it is hot and bubbly.

Roxie is excited to meet Gavin's sisters. Ginger explains to Roxie how Cheesy Spinach Shrimp Lasagna is their family favorite, and can't wait to try Gavin's creation. It was their favorite meal and the first thing they learned to cook while living with the Travellers.

Everyone loves the Lasagna and all toast Gavin for his efforts. Roxie is now hooked, and it's her new family favorite too! Gavin is thrilled and thinks that next time he will serve this meal with some salad and garlic bread.
