Hey fellow Simmers! Stef here! For the Cookbook I have decided to share this yummy lemon and poppy seed recipe with you. It's great as a dessert or even as an occasional snack. Just slap some whipped cream or custard on them, hot or cold, and enjoy!

The ingredients you'll need are as follows: 2 eggs, beaten 250ml milk 80g caster sugar 100ml vegetable oil 300g plain flour 3 tsp baking powder 1/2 tsp of salt (helps the baking powder to do its job) The zest of 3-4 lemons 2tbsp poppy seeds

First, You need to pre heat your oven to 190 degrees C / 400degrees F / Gas Mark 6.

Line a muffin tin with paper muffin cases (this recipe makes around 10 - 12 'normal' sized muffins or 6 - 8 'jumbo' muffins). If you don't have any cases to hand, grease the muffin tin with butter instead.

Mix the egg, sugar, milk and oil in a large bowl. Sift the flour, baking powder and salt into the bowl. Next, add the lemon and poppy seeds. Roughly mix.

Spoon the mixture into your cases. If you want the normal sized muffins, fill the cases to just over half way. If you're feeling a bit naughty/hungry, make the jumbo muffins by filling the cases to around three quarters of the way up. Remember to space these cases out! The muffin tops will go over the top.

Put the muffins on the middle shelf of your pre heated oven. Bake for around 30 minutes, or until well risen and golden.

Don't open that oven too much to check on them! They can sink that way! Near the end of the 30 minutes, you can check to see if they're cooked by poking a sharp knife (get someone else to do this if you're a young'un) into one of the muffins. If it comes out clean they are done. If not, give the muffins another round in the oven for a few minutes.

When the muffins are cooked, take them out of the oven and place on a wire rack to cool down a bit. Serve as you wish!
(If any survive they should be kept in an air tight container for later)
