Hi I'm Star Gieke. You probably know my dad Chester. Well I am married to a wonderful man, Gallagher Newson. He has been on the outs with some of his foster siblings. So I would like to have them over for dinner. I am going to make Chicken Francaise!

I stayed up late last night looking for recipes. Chicken Francaise was my dad's favorite. He used to make it all the time. I really miss him.

Oh Wow, Here it is. I found it at www.epicurious.com. I hope it turns out good and that all the Newson siblings come to dinner. Gallagher and I feel terrible for not going to Gavin's Cheesy Spinach Shrimp Lasagna dinner party.

Lets get all the ingredients out.
2 lbs. boneless skinless chicken breasts - pounded thin or cut thin 1/2 cup vegetable oil 1 cup all purpose flour 3/4 teaspoon salt 1/2 teaspoon black pepper 3 large eggs 1/2 stick (1/4 cup) unsalted butter 1/2 cup dry white wine 1/2 cup chicken broth 3 tablespoons lemon juice, plus one whole lemon thinly sliced 1/4 cup chopped fresh flat leaf parsley

Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking.

While the oil is heating, stir together flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a shallow bowl.

Dredge 2 peices of chicken, 1 peice at a time, in flour mixture, shaking off excess. Lightly beat eggs in another shallow bowl. When oil is hot, dip floured chicken into beaten eggs to coat, letting excess drip off, then fry, turning over once, until golden brown and just cooked through, about 4 minutes total.

Transfer to a plate lined with paper towels and keep warm, loosely covered with foil. Fry the remaining chicken in the same manner.

The butler has arrived to help. He can do this next part.
Pour off and discard oil, then wipe the skillet clean and heat butter over low heat until foam subsides. Add wine, broth and lemon juice and boil uncovered, stirring occasionally, until sauce is reduced to about 1/2 cup, about six minutes. Stir in parsley and remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Spoon sauce over chicken and top with lemon slices.

There's plenty of left over wine too! Oh and I usually double the sauce recipe, just so there is plenty. This chicken is served with rice, salad and garlic bread or dinner rolls.

Here we are all having a wonderful time at dinner. That is Gabriella, Ginger (on the computer), Gavin and Georgia. Only Garrett Newson is missing. Oh well, it's just nice to see them all together.
