Alright. Let's start by pre-heating our waffle iron while we gather the ingredients. Here's what you'll need:
2-1/2 cups all-purpose flour 1/3 cup packed light brown sugar 2-1/4 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 teaspoons ground cinnamon 1 teaspoon ground ginger 1/4 teaspoon ground cloves 4 large eggs 1 cup whole milk 1 cup well-shaken buttermilk 1 cup canned solid-pack pumpkin 3/4 stick (6 tablespoons) unsalted butter, melted additional melted butter for brushing waffle iron additional butter for serving with waffles warm maple syrup

Next, sift together your flour, brown sugar, baking powder and soda, salt, and spices. These are all of our dry ingredients. We can put them to the side for now.

Now for the secret ingredient! I chose to use my own pumpkin puree for this recipe, but you can use any plain old canned pumpkin, if you like.

Next, whisk the eggs in a large bowl until blended, then whisk in milk, buttermilk, your pumpkin, and your butter until its nice and smooth.

...But don't forget about the dry mix we made earlier! Whisk in the dry ingredients just until you don't see any more lumps.

Its starting to look nice and even now, so I'm going to grease my waffle iron. We don't want our pumpkins sticking to the iron, do we? Take that extra margarine and brush it lightly on the top and bottom of the iron.

Spoon the batter into your waffle iron according to the manufacturer's directions for quantity of batter. Cook your waffles according to manufacturer's instructions. I always look for a nice golden brown color when i take them out.

To keep your waffles warm and crispy, put them in the oven at 250 degrees. As for me, I can't wait a second longer!
