Hi! Welcome to My Kitchen! Today i'm going to show you how to make a little dish I like to call Apple Pancakes. This is for my 2008 Harvest Cookbook entry.

First, gather the ingredients. 2/3 cups Flour, 2 teaspoons of Sugar, 1/4 teaspoon of Salt, 4 Eggs, beaten (I suggest Large), 1/2 Cup of Milk, Around 2 cups of Aples, cut into slices. (I suggest around 1/4 inch or maybe even 1/3?) 3/4 Cups of Butter 2 tablespoons of Sugar, 1/4 teaspoon Cinnamon.

Now, Let's Get Cooking! Sift together the sugar (2 teaspoons only though!) and the salt. Also, beat together the eggs and milk. Every so often, add some flour and beat until smooth.

Saute apples in 1/4 of a cup of butter, hopefully you'll get to this a lot faster (not like me!). Mix in the sugar left over (2 tablespoons) and the cinnamon together. Then, tosss (yes, toss) the sugar-cinnamon mix with the apples you sauted earlier.

Now, melt 2 tablespoons of butter in a 5-inch to 7-inch diameter (I suggest 6-inch), frying pan.

Pour in the batter to about 1/4 inch. When that has all set and evened out, put about 1/4 of the apples on top. Then, cover the apples with more batter.

This is your pancake! Fry it until it is lightly browned on each sides. If you think you can do it, maybe toss it in the air! (Please Note: I am not legally responsible for any pancakes on the celing or floor; lol!). Keep that warm! This recipe is for 4 servings, so simply redo the procedure 3 times, until all the ingredients are used up.
